Did some dino ribs on the 22" Weber kettle
Rolled ~275F with post oak and B&B charcoal for 7hrs unwrapped till probe tender (was probing tender around 190F this time) wrap to rest for 4hrs in a 150F oven with rendered tallow.

Not my first time smoking dino ribs in general but first time doing a long cook on the kettle

Used Snake method

Mods:
-Venom Spider
-Woolly bully insulated lid
-Only fire ceramic inserts
-Only fire smoking chamber
– 20" Carbon steel pan as a drip pan

  3. Wish I could find Dino ribs around me, the only beef ribs I can find have almost no meat on them.

    Looks delicious, and I want to try it. What exactly kind of beef rib is this? Mostly what I see around here are beef short rib plates of about 4 ribs, and they don’t look meaty like this.
